Egg Fried Rice


Ingredients

  • Long grain rice - 1 cup
  • Mixed vegetables ( frozen) - 1 cup ( i chose carrot, beans and corn)
  • Cabbage - 1/4 cup
  • Yellow onion - 1/2 cup finely chopped
  • Soy sauce - 2 tbsp
  • Egg - 4
  • Salt (as needed)
  • Pepper - 2 tbsp

Method

Rinse rice and pressure cook it with required water until rice grains are 3/4 cooked. Keep it aside.


Heat oil in a pan , add chopped onion  and then fry until it starts browning.


Add mixed vegetables and saute till they shrink .


Then add soy sauce, pepper, and required salt in high flame. Keep stirring continuously for 10 seconds.



Then simmer until the veggies are well blended with the sauce and fried well.

Add the cooked rice into it and mix well. Let the rice fry for 3-4 minutes.

Scramble the egg separately and add to the rice as a garnish.

Serve hot with Chicken gravy or Gobi manchurian. 

Note

Take care not to overcook the rice. Each grain of rice should be separate.
