Beetroot Rice


Beet rice is good for anemic and has more fibre. This is very simple pulav that can be made in less than 30 minutes. A perfect recipe to put in lunch box.

Ingredients

  • Basmati rice - 2 cups
  • Beet root - 1 
  • Channa dal - 2 tbsp
  • Urad dal - 1 tbsp
  • Black mustard - 1/2 tbsp
  • Curry leaves - few
  • Green chilli - 2
  • Salt - for taste

Method

1.  Rinse rice and pressure cook it with required water until rice grains are 3/4 cooked. Keep it aside.

2. Grate the beetroot well .

3. Heat oil in a pan. Add black mustard seeds. The mustard seeds will splutter. Then add channa dal, urad dal, chillies and curry leaves.

4. Add in finely grated beetroot. Pour in water and bring it to boil. Cover and simmer for 15 - 20 mins.

5. Turn off heat and let it rest for 10 mins.

6. Then add cooked rice into it. Carefully fluff it with a fork. Serve hot with Raita.

Note:

We can garnish it with ghee roasted cashew nuts.
