Brown Rice Kheer Recipe
Brown rice kheer is an indian dessert made with brown rice instead of the traditional short grain rice. Cooked with milk, sugar and cardamoms for flavor, the brown rice kheer is filling and delicious.
Ingredients
- 1 cup basmati brown rice (washed and drained)
- 2 cups of milk
- 2-3 cups of water
- 1 tbsp ghee
- 3-4 cardamons (crushed)
- 3 tbsp almonds
- 2 tbsp pistachio
- 1 tbsp raisin (optional)
- 2-3 tbsp sugar or as desired
Direction
Soak brown rice for 30 – 60 minutes
Cook soaked rice with 2 cardamon pods till slightly mushy
Chop Almonds and Pistachio nuts
In a warm non stick pan, add ghee and remaining cardamon pods
Once cardamon pods start to ‘sizzle’, add chopped almonds and pistachio nuts. Allow nuts to change color
Add sugar, and allow to caramelize while stirring
Add cooked rice and mix well
Add milk and cook until milk is absorbed. Stir occasionally so that rice does not stick to the pan.
Remove from fire, Kheer can be served hot or cold.
Note:
Some like to cook the rice in milk then add the ghee, nuts and sugar. I do not think it will make much difference, it is more a question of habit i guess.
